Cornflake Chocolate Chip

Trust me when I say this isn’t your regular cornflakes cookies. This here is a crispy crunchy bake created with a combination of chocolate chips and cornflakes. Ingredients

  • Lightly beaten small eggs; (50grams)
  • Lightly crushed cornflakes; 120grams
  • Caster sugar; 80grams
  • Plain flour; 150grams
  • Baking powder; 1 tablespoon
  • Vanilla extract; 2 tablespoons
  • Chocolate chips; 75grams
  • Salted butter; 125grams

Instructions

  • Do a preheating of your oven for up to 180degree Celcius
  • Put your sugar and butter in a bowl and beat until a creamy, pale cream is formed
  • Beat your eggs and add it gently to the bowl as you continue to beat
  • Add your vanilla while you keep beating
  • Sift in your baking powder together with your flower gently into the bowl
  • Inside the same bowl, pour in your cornflakes and chocolate chips as you stir gently using your spatula
  • Grab a dessert spoon and use it to shape the cookie dough from the bowl and finally use a butter knife to put the dough inside your baking sheet
  • Finally, place in the oven to bake for 15minutes after which you allow to cool before serving

Cashew Nut Cookies

Ingredients

  • Sifted plain flour; 240grams
  • Custard powder; 40grams
  • Baking powder; ¼ tablespoon
  • Egg yolk; 18grams or 1piece
  • Sifted icing sugar; 85grams
  • Soften salted butter; 125grams
  • Ground cashew nut; 100grams
  • Vanilla extract; ¼ tablespoon

Instructions

  • Preheat your oven to 170degree Celcius
  • Take a bowl to beat your icing sugar, egg yolk, butter, and vanilla extract together for about 30 seconds or more
  • Mix in your ground cashew nut, your plain flour, your baking powder, and your custard powder gently to form a dough that is pliable for shaping and resizing
  • Take 2 plastic sheets, place your dough in-between them, and roll to form a 5mm thick roll
  • Take a cookie cutter and cut the roll formed from the last step above into your prefered shapes and sizes
  • Line your baking tray with baking paper and place your cookies cut cookies in there
  • Carefully place one cashew nut each on each cut cookie
  • Glaze the pieces with beaten egg yolk
  • Place the baking tray in your preheated oven and allow to heat for 20-30 minutes
  • Allow cooling before you serve
